Prior to Disney+ phases, series' episodes are mixed to keep all sub-universes (i.e., ABC, Netflix, and Hulu/Freeform) fresh to avoid forgetting storyline arcs. In order to "fit" all of the varying series together before Infinity War, small adjusts were made, such as pushing Defenders' series' timelines up slightly, but this also helps spread out the episodes better as well. However, it's not enough to notice drastic changes in the timeline.
Previous iterations of Sony-owned Marvel characters/films such as Spider-Man, Venom, and Morbius as well as X-Men have been "added" to the MCU via the multiverse explanation, these series are also included, with the footnote that it's much later in the viewing that the connections are made. In order to make the 5 year jump between Infinity War and End Game feel plausible, the alternate timeline universe in the final Agents of S.H.I.E.L.D. seasons and the alternate X-Men timeline (starting with Days of Future Past) helps fill the void and brings us back to the primary MCU universe just in time to bring us full circle.
