For their second week in the tent, the bakers will be dealing with bread, which may be outside of their comfort zone in perhaps not being a regular bake at home, like cakes or biscuits, and in knowing that Paul, a bread fanatic, will be hypercritical. Their signature challenge may take them even more outside that comfort zone in being asked to make types of bread that don't fall into those usual loaves or buns: flatbread. They must make six each of a yeast raised flatbread and a flatbread leavened by something other than yeast, all cooked or baked in whatever manner they choose. The technical challenge may appeal only to the most organized and methodical of bread maker: the eight-stranded plaited loaf, with Paul providing specific instructions as to the order of the plaits. And the showstopper will not only test the baking skills of the contestants, but also their poaching skills in they needing to make a batch of twenty-four bagels, twelve savory and twelve sweet.
