- Prue Leith - Restaurateur and Writer: To be honest, if I drop the turkey on the floor and don't tell anybody, it's not going to be the end of the world. I'm not concerned about it. Because I'm a competent, confident cook, even if I overcook it I know that the most central thing is not that they've come here to give me Michelin stars - they're not coming to judge me for the excellence of my cuisine. I hope they're coming because they're my family and they love us all, and so they come to see us.
- Diana Henry - Food Writer: If you think about the Christmas meal, it has no religious significance whatsoever. There is nothing in it which has got anything to do with the birth of Jesus. I think, maybe, some people would enjoy it more if they could take the religious element out of it, and think about feasting, anfd think about the food, and think about having a good time. I think it's the one day in the year when we should be able to eat whatever we want and sort of hang the health police. It's feasting. I think that denying yourself things is bad for your health, to be honest.
- Diana Henry - Food Writer: Food writers fill our heads with "Oh, you've got to put it in muslin, you've got to brine it beforehand, you've got to turn it over, you've got to put it on this side, you've got to do it on that side." It's more pampered than a baby by the time it comes to the table. And actually, it's just a big chicken. Put it in the oven and roast it!
