- Ross Poldark: What's the summer going to be, Jud?
- Jud Paynter: Ah, well, fair, I reckon.
- Demelza Carne: What do you ask him for? He ain't no farmer. Might as well ask a pickle in a barrel as ask him.
- Demelza Carne: [Sarcastically to Ross about rum] Do you think one bottle will be enough, sir, or shall I get another?
- Ross Poldark: [Referring to the magistrates] Savages! They think because they're done up in their finery. they're almighty civilized people, but they're savages and worse. They treat their animals better than they treat their laborers. One day the knives will be out, and then God help them.
- Elizabeth Poldark: And whose side will you be found on, Ross?
- Ross Poldark: Not on the side of the gentry; you may be sure of that. I despair of my own class sometimes.
- Demelza Carne: [to Ross] I'm to be punished because I got above myself. I should have been like Margaret, your lady of pleasure in Truro and asked for money this mornin', and that would have been fine. You'd have thought nothing of it.
