But when he gives it to Chandler, and he gives it back, you can see that there is a bunch of circles standing completely apart from each other.

When Joey was filming his butt double scene, the director wouldn't have done multiple takes like you would if you were filming a scene with dialogue. He would've just kept it rolling and told Joey what to do (don't clench, etc) until he got footage that he liked. Then later they would edit out the director's voice.
However, this is obviously done for jokes to make the audience think that Joey is wasting the director a lot of time and film.

Where Joey is playing Al Pacino's "butt-double", Joey is supposedly naked but you can clearly see the shadow of a pair of shorts on the shower wall in front of him.
During the scene where Joey is on the movie set, behind the director is a box that says "Monica's", indicating that they did the simple thing and simply shot their own sound stage as a sound stage with no backdrop.
